Remembering Radio Station Days

Making Grandma Dee's Brownies

All though some days it feels like life time ago, it wasn't that long ago that my husband was Sales Manager of the local radio station cluster here in the Valley. The years he worked out there where good years for our family. Adrian and Dee where good friends as well as coworkers. It wasn't very long after he started to work with her that Adrian started calling Delores Grandma Dee. She really was like another Grandma to us and the kids. My kids grew up running through the radio station. The kids and I had many picnic meals with Adrian and Grandma Dee as they ran the boards for whatever games were being played that day. It was like a second home to the kids and they spent many hours there.

Grandma Dee and I also traded meals, baked goods and recipes that we had made back and forth. Adrian loved her Chocolate Mint Brownies. She would make them for him on his birthday or at Christmas. He loved them so much he got her the share the recipe with me. Every time I bake them and my house is filled with the smell of hot melted chocolate I am taken back to the radio station, and Grandma Dee is sitting there behind the board making sure the game stays on air. Thanks for the memories Grandma Dee!! Thank you for the Andes Mint Brownie recipe. But, most of all thank you for all your years of friendship Grandma Delores Cox.

Grandma Dee's

Andes Mint Brownies

First make sure you have all of your ingredients and all the stuff you may need. If you don't have everything you will need to go shopping. You will need Bake's Joy (or whatever cooking spry you like to use) and foil or parchment paper will also work. A square baking dish works the best. The ingredients for the brownies are:

½ Cup butter

2 Ounces unsweetened chocolate

1 Ounce semisweet chocolate

2 Eggs

1 Cup sugar

1 ½ Tablespoon unsweetened coco powder

1 Teaspoon Vanilla extract

½ Cup Flour

14 Andes Mints

Now that you have everything you need preheat you oven to 350 degrees.

Spray your baking dish with Baker's Joy and line it with foil/parchment paper, making sure it hangs over the edge of you dish. Spay the foil/parchment paper with Baker's Joy too.

In a double boiler (I use a Pyrex Bowl over a pot) add your ounces of chocolate and your butter.

Cook over simmering water until melted.

 

Set out too cool slightly.

Now blend together eggs, sugar, coco, and vanilla with a mixer on low speed. Add the cooled chocolate and butter mixture. Mix on low until just blended. Add flour and mix until blended. Pour into your prepared baking dish. Place into oven and bake for 22 minutes. You can check the brownies by placing a toothpick in the center. If it is clean when you pull it out brownies are done. Now, while the brownies are baking unwrap the Andes Mints. I always make sure to have more set aside because I know I will eat a few. When the brownies are done, place the unwrapped Andes Mints on top.

Once melted, it takes a minute or two, swirl them around.

Once cooled remove from baking dish with the foil/parchment paper. Cut, serve, enjoy and remember Delores Cox the hardest working woman in radio as you enjoy one of her favorite recipes.
